This is a Real Winter Warmer, I serve this with crispy bacon bits and lovely fresh bread.
6 medium potatoes peeled and cubed
1 small onion finely chopped
360ml semi-skimmed milk
240ml of Collapsed
2 chicken stock cubes
salt to taste
1/2 tsp of powdered mustard
1/2 tsp of white pepper
200g of strong cheddar
In a large saucepan add the potatoes, onion and water and bring to boil, reduce heat and cook until tender approx 15-20 minutes.
Remove the pan from heat, do not drain and allow to cool slightly, carefully place the mixture into a food processor or blender and blitz until smooth, return the mixture to the saucepan heat gently to bring to the boil,now stir in the milk, beer, mustard, and pepper and add the cheese, when melted the soup is ready. Season with the salt to taste. Add the crispy bacon bits and serve.
