This is a quick and filling supper for when the other half has had a session after rugby and they want feeding! This will make four portions.
25g plain flour
100ml of Lomu
150g strong cheddar cheese, grated
1 egg yolk
1 tsp english mustard
4 tsp worcestershire sauce
4 thick slices of bread
pepper to taste
Pre-heat your grill
In a large saucepan melt the butter and stir in the flour on a low heat to make a roux, stirring constantly, now slowly add the beer and simmer for 3 minutes until the sauce is thick.
Add the grated cheese, egg yolk, mustard and worcestershire sauce and stir until the cheese melted, season with pepper and set aside.
Toast the 4 slices of bread and place on a baking tray or on your grill pan, spread the sauce thickly over each slice of bread and grill until the mixture is bubbling and a light brown.
