This a great recipe for family  parties or barbecues, this recipe will make approx 48 wedges depending on the size of potatoes, I like to use roosters  for these as they have a lovely crisp skin but any good baking potato can be used. Add a teaspoon of paprika for spicy ones.

4 medium potatoes scrubbed

110g plain flour

60ml milk 1 egg

1 tsp salt

1 tbsp of vegetable oil

1/2 tsp pepper

120 ml of “99”

Pierce the potatoes and microwave on high for 10-12 minutes until tender turning once, please make sure you pierce them otherwise they will explode.

Meanwhile in a bowl whisk the flour,milk,egg,salt,oil and pepper until smooth then stir in the beer set aside for at least half an hour. when your potatoes are cool enough to handle, cut each potato into 12 wedges.

Heat your deep fat fryer to 190C  and dip each wedge into the batter, remember to remove the basket as they will stick, fry in batches for 3-4 minutes until golden brown, drain on kitchen towel and keep warm repeat process until you have finished. Serve with  soured cream or your favourite dips.
